Plums with Cider Sauce
- 2 Tbs. unsalted butter
- 4 large plums, pitted and sliced (4 cups)
- 1/4 cup light brown sugar
- 1/2 tsp. ground cinnamon
- 3/4 cup apple cider
- 4 slices nonfat pound cake
- Vanilla ice cream
- 4 tsp. chopped candied ginger
- Melt butter in large skillet over medium-high heat.
- Add plums, and saute 5 minutes, or until softened, stirring halfway through.
- Sprinkle with sugar and cinnamon, and reduce heat to medium.
- Stir in apple cider, and simmer 4 to 5 minutes, or until cider is syrupy, scraping up any brown bits from bottom of pan.
- Meanwhile, toast pound cake in toaster oven until browned.
- Place 1 slice pound cake on each plate.
- Spoon plums and sauce over cake, top with ice cream, and sprinkle with candied ginger.
