Briana's 1st-Prize Venison Chili
- 3 lbs ground venison
- 2 lbs ground beef
- 1 lb chorizo sausage
- 1 (12 ounce) package bacon, cut into bitesize pieces
- 4 onions, diced
- 4 garlic cloves, minced
- 4 green bell peppers, diced
- 4 jalapenos, diced
- 56 ounces Rotel Tomatoes
- 56 ounces tomato sauce
- 4 tablespoons cumin
- 8 tablespoons chili powder
- 4 teaspoons salt
- 2 teaspoons cayenne pepper
- 2 teaspoons smoked paprika
- 1 12 tablespoons cocoa powder (DO NOT SKIP)
- 21 ounces red kidney beans
- 2 cups water
- Spray a large pot or Dutch Oven with cooking spray.
- Over medium heat, saute the bacon and garlic together till the bacon starts to turn colors and the garlic is very fragrant.
- Add the rest of the meats, onions and peppers.
- When meat is all browned and starting to cook through, add all other ingredients and simmer for 1-2 hours.
