Baked Apricots
- 3 tablespoons unsalted butter, cut into small cubes, plus more for the baking dish
- 1 pound ripe fresh apricots, halved and pitted
- 2 tablespoons sugar
- Creme fraiche or vanilla ice cream for serving
- Preheat the oven to 400F.
- Generously butter a large baking dish.
- Put the apricot halves, cut side up, in the dish in one layer.
- Sprinkle with sugar, dot with butter, and bake until tender, about 15 minutes.
- The apricots should be caramelized with the sugar but retain their shape.
- Serve immediately with creme fraiche or ice cream.
