Easy Cheesy Muffins Recipe
- 1 c. self-rising cornmeal
- 1 c. self-rising flour
- 5 tbsp. sugar
- 3/4 c. grated sharp cheese
- 1 c. lowfat milk
- 1 egg, beaten
- 3 tbsp. melted shortening
- Combine meal, flour and sugar in bowl.
- Add in grated cheese and blend.
- Add in lowfat milk, egg and shortening and stir till thoroughly blended.
- Fill warm, greased muffin pans about 2/3 full.
- Bake at 425 degrees for about 20 min.
- Makes 10 to 12 muffins.
