Marinated Tuna and Radicchio Salad

  1. Combine olive oil, lemon juice, sugar, salt and pepper.
  2. Stir in tuna with its oil, bay leaf and clove.
  3. Cover and refrigerate for at least 1 hour.
  4. Remove and discard bay leaf and clove.
  5. In large serving bowl, toss lettuce and radicchio.
  6. Place tuna mixture in center of bowl, on top of the lettuces.
  7. Surround with tomatoes and sprinkle with salt and pepper to taste.
  8. Scatter pine nuts and parsley over top.
