Chocolate Truffle Cookies
- 4 sq. unsweetened chocolate (1 oz. each)
- 2 c. (12 oz.) semi-sweet chocolate chips, divided
- 1/3 c. butter or margarine
- 1 c. sugar
- 3 eggs
- 1 1/2 tsp. vanilla extract
- 1/2 c. all-purpose flour
- 2 Tbsp. baking chocolate cocoa
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- confectioners sugar
- In microwave or double boiler, melt unsweetened chocolate, 1 cup of chocolate chips and butter; cool 10 minutes.
- In other bowl, beat sugar and eggs for 2 minutes.
- Beat in vanilla and chocolate mixture.
- Combine flour, cocoa, baking powder and salt and beat into mixture.
- Stir in remaining chocolate chips.
- Cover and chill 3 hours.
- Remove 1 cup dough and with lightly floured hands roll into 1-inch balls.
- Place on ungreased cookie sheet and bake at 350u0b0 for 10 to 12 minutes or until slightly puffed.
- Cool 3 to 4 minutes and transfer to wire rack. Dust with powdered sugar.
