My Own Chili Con Carne
- 4 tablespoons bacon grease
- 2 onions, chopped
- 6 garlic cloves, minced
- 3 lbs beef chuck, ground
- 1 green pepper, chopped
- 1 teaspoon salt
- 6 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 tablespoon dried oregano
- 1 14 teaspoons cocoa powder (I use Hershey's unsweetened)
- 2 teaspoons molasses
- 1 tablespoon tomato paste
- cayenne pepper (to taste)
- 4 cups beef broth
- 1 (15 ounce) can white beans, rinsed
- Heat bacon grease in a large skillet over medium heat.
- Stir in onions, green pepper, and garlic and cook until they are soft.
- Add the beef and salt and cook until meat loses its pink color.
- Add the chili powder, cumin, oregano and cayenne and continue cooking for about 5 minutes.
- Add the beef broth and stir in the cocoa, molasses, tomato paste and simmer, partially covered about 2 hours or more, stirring occasionally.
- Stir in the beans about 1/2 hour before serving.
- Serve in large bowls.
