Pasta E Fagioli

  1. Brown chicken in a frying pan with fresh basil.
  2. Do not cook through, just brown it.
  3. In a large stockpot, add onion, carrot and garlic and saute for 10 minutes.
  4. Add remaining ingredients, including the chicken but except the pasta, and simmer covered for 1 hour stirring occasionally.
  5. Remove 1/2 of the beans, carrots, onion, and all of the chicken.
  6. Blend the remaining stock with a hand blender.
  7. Return the chicken, beans, carrots and onion.
  8. Add the pasta and cook for a further 15 minutes.
