Goya Champuruu - Okinawan Bitter Melon Stir-Fry with Somen Noodles
- 2 bundles Somen noodles
- 1/2 Bitter melon
- 1/2 Carrot
- 150 grams Ground pork
- 1 Sesame oil
- 1 tbsp Sake
- 2/3 tsp Salt
- Cut the bitter melon in half lengthwise and take out the seeds and the fluffy bits inside.
- Slice into 5 mm wide pieces, and sprinkle with a little salt.
- Finely julienne the carrot.
- Bring a pot of water to a boil and cook the somen noodles following package instructions.
- Rinse in plenty of running water to get rid of any stickiness on the surface, and drain well.
- Heat some sesame oil in a frying pan and stir fry the ground pork.
- Add the vegetables to the frying pan and stir fry.
- Add the somen noodles to the pan and stir fry for about 20 seconds while untangling the noodles.
- When the noodles are coated with oil, add the flavoring ingredients and stir quickly.
- Transfer to serving plates and enjoy!
