Spinach and Tomato With Whole Wheat Pasta
- olive oil
- 8 garlic cloves, minced
- 1 pint grape tomatoes, quartered
- 1 (9 ounce) bag fresh spinach
- 8 ounces whole wheat rotini pasta
- 1 cup grated monterey jack with jalapeno
- crushed red pepper flakes
- salt
- Put on water for pasta and cook according to box directions.
- Meanwhile, heat olive oil in skillet and add crushed red pepper to your desired level of spiciness.
- Add garlic and saute just until fragrant, about 3 minutes.
- Add tomatoes and saute just until warm, about 3 additional minutes.
- Add spinach and cook until wilted.
- Season with salt, if desired.
- Combine cooked pasta with spinach and tomato mixture.
- Add grated cheese until melted.
- If mixture is too dry, add pasta water until it is at your desired level of moisture.
