Lentils

  1. wash lentils.
  2. make sure there isn't any bad ones there or small rocks.
  3. in a pot add a bit of oil about 3 table spoons.
  4. add onions garlic and bacon .
  5. saute till bacon releases some fat and onions and garlic get translucent.
  6. add rinsed lentils and allow them to soak up some flavors maybe about 10 minutes.
  7. add chilli paste
  8. add warm water
  9. toss in bay leaves.
  10. add salt pepper to taste but don't forget bacon is salty so don't over do it.
  11. cover on med heat but leave lid open slightly.
  12. you can sub sausage in place of bacon.
  13. you can add small pieces of potato if you like.
  14. my grandmother would add bits of pumpkin.
  15. let it all cook for about 45 minutes.
  16. don't let it dry out.
  17. if you see it's getting dry turn off heat and close lid.
  18. also remember to remove leaves at the end.
