Fluffernutter Cupcakes / Frosting

  1. Prepare, bake, and cool basic vanilla cupcakes.
  2. Beat butter on medium high speed until fluffy.
  3. Slowly beat in peanut butter, marshmallow cream, and vanilla until smooth.
  4. Gradually add confectioners sugar and beat until fluffy.
  5. Spoon 1 1/4 c frosting into plastic freezer bag.
  6. Snip 1/4" hole in one corner.
  7. Insert bag tip 1" into top of each cupcake.
  8. Squeeze in 1 Tbs frosting for each.
  9. Spread remaining frosting atop cupcakes (use decorative frosting tips for presentation).
  10. Garnish with mini-marshmallows and chopped peanuts, as desired.
