Rice Polaf Salad
- 2 cups turkey cooked and diced
- 1 1/2 cups rice brown, cooked
- 1 cup chickpeas (garbanzo beans) cooked
- 1 cup red kidney beans cooked
- 2 each apples cored and chopped
- 1/2 cup celery sliced
- 1 each green bell peppers chopped
- 1/2 cup green olives sliced
- 1/4 cup scallions, spring or green onions sliced
- 1/4 cup parsley leaves diced
- Combine all ingredients and toss together.
- Chill 1 hour.
- Just before serving, pour dressing of your choice over salad.
- Toss and serve.
