White Chili
- 3 (16 oz.) cans Great Northern white beans
- 4 c. chopped, cooked chicken breast
- 1 Tbsp. olive oil
- 2 medium onions (chopped)
- 4 minced garlic cloves
- 2 (4 oz.) cans chopped green chilies
- 2 tsp. ground cumin
- 1/4 tsp. cayenne pepper
- 3 c. grated monterey jack cheese
- 1-1/2 tsp. ground oregano
- 3 c. chicken broth
- sour cream
- salt and pepper to taste
- Saute onions in oil till translucent.
- Add garlic, chilies, cumin, oregano, and cayenne; cook 2 more minutes.
- Add beans (with liquid) and broth; bring to boil.
- Reduce heat.
- Add chicken and cheese.
- Stir till cheese melts.
- (If cheese is not done just right, it will be stringy.)
- Season with salt and pepper.
- Ladle into bowls.
- Garnish with a dollop of sour cream.
