Fried Green Tomato Parmesan

  1. Preheat oven to 400 degrees F. Spray an 8x8-inch baking pan with cooking spray.

  3. Follow the instructions for my Fried Green Tomato recipe from my Tasty Kitchen Recipe box.

  5. Drain the fried green tomatoes on a paper towel.
  6. (I didnt, but if you want you can add salt and pepper to taste).

  8. Brown Italian sausage in a medium skillet over medium heat.
  9. Once its browned, drain off the grease.
  10. Add 8 ounces marinara (spaghetti) sauce, either store-bought or homemade and mix to combine.
  11. Set it to the side.

  13. In an 8 x 8 baking dish, lay 4 fried green tomato slices.
  14. Top each with 1 to 2 tablespoons of the marinara meat sauce.
  15. Sprinkle with 1/2 cup Italian blend cheese.
  16. Sprinkle with 1/4 teaspoon Italian seasoning.
  17. 5.
  18. Layer with the remaining fried green tomatoes.
  19. Top with remaining marinara sauce.
  20. Sprinkle with Italian seasoning.
  21. Top with all the remaining Italian blend cheese.
  22. 6.
  23. Bake 30 minutes.
  24. Sprinkle with Parmesan cheese and bake another 5 to 8 minutes until bubbly and nicely brown.
  25. Cool for 5 minutes before serving.
  26. Cooks Notes: I dont use salt and pepper in this recipe, but you may want to depending on your taste.
  27. Easy to make this into a vegetarian dish, just leave out the sausage.
  28. Casserole is wonderful!
