Stuffed bell peppers
- 6 large peppers with tops cut off or 4 peppers that are cut in half. I use green, red, yellow, and orange sometimes
- 1 lb lean ground beef
- 1/2 cup chopped onion
- 1 clove garlic minced
- 2 tbsp Emeril's bam burger seasoning
- 1 can 15 oz tomato sauce with garlic
- 2 cup cooked rice
- 1/2 can Petite diced tomatoes drained
- 1 dash salt and pepper
- 1 can 15 oz brooks mild or spicy chili beans drained
- 2 cup shredded cheddar cheese
- Pre heat oven to 375 F Remove seeds and rinse peppers throughly with water
- Salt and pepper the insides of the peppers and place in a baking dish add 1/2 cup water to the bottom of dish
- cook ground beef with onion, garlic, salt, pepper, and seasoning
- drain beef and add 1/2 can of sauce, beans, tomatoes, rice, and 1 cup of cheese mix throughly
- stuff peppers with mixture top with remaining sauce and cheese
- cover and bake for 25 minutes then uncover and bake for another 25 minutes
