Double Lemongrass Iced Tea

  1. Prepare the Basic Simple Syrup as directed, adding half of the chopped lemongrass, before bringing it to a boil.
  2. Remove from the heat and let steep for 30 minutes.
  3. Strain the lemongrass syrup into a large measuring cup.
  4. In a large saucepan, combine the remaining chopped lemongrass with the cold water and bring to a boil.
  5. Remove from the heat and let stand for 1 hour.
  6. Bring the lemongrass tea back to a boil.
  7. Remove from the heat and add the tea bags; let steep for 5 minutes.
  8. Remove the tea bags and let cool to room temperature.
  9. Transfer to a bowl and refrigerate until chilled.
  10. Pour the lemongrass tea into a pitcher and stir in 1/2 cup of the lemongrass syrup, or more to taste; refrigerate the rest for later use.
  11. Serve in 8 tall glasses over ice.
  12. Garnish with a lemongrass stalk.
