Plum Nut Bread
- 2 c. diced blue plums (1/2-inch pieces or smaller)
- 1 c. butter or oleo
- 2 c. sugar
- 1 tsp. vanilla
- 4 eggs
- 3 c. flour
- 1 tsp. salt
- 1 tsp. cream of tartar
- 1/2 tsp. baking soda
- 3/4 c. plain yogurt
- 1 tsp. grated lemon peel
- 1 c. chopped nuts
- Prepare plums.
- Cream butter or oleo with sugar and vanilla until fluffy.
- Add eggs, one at a time, and beat after each addition.
- Sift together flour, salt, cream of tartar and baking soda.
- Blend yogurt and lemon peel and add to creamed mixture alternately with dry ingredients.
- Stir until well blended.
- Add chopped nuts and chopped plums; mix well.
- Divide between 2 greased and floured 9 x 5-inch loaf pans . Bake in a preheated 350u0b0 oven for 50 to 55 minutes or until bread tests done.
