Baked Potatoes Florentine
- 4 baking potatoes
- 9 oz. pkg. frozen creamed spinach
- 2 egg yolks
- 1 tsp. salt
- 2 slices processed Cheddar cheese
- 1/4 tsp. nutmeg
- 1/4 tsp. pepper
- 1/4 tsp. onion powder
- About 1 1/2 hours before serving, bake potatoes 50 to 60 minutes in 450u0b0 oven.
- Meanwhile, cook spinach as directed on label; drain.
- When potatoes are fork tender, cut lengthwise in half and scoop out pulp.
- With electric mixer, at medium speed, combine potato pulp, egg yolks, salt, pepper, onion powder and nutmeg.
- Beat until very smooth.
- Stir in drained spinach.
- Heap potato mixture back into shells.
- Cut cheese into eight strips, placing 1 on each potato.
- Place on cookie sheet and return to 450u0b0 oven for 8 to 10 minutes or until cheese is melted and potatoes are hot!
