Angel Pecan Pie Recipe

  1. Beat egg whites till foamy.
  2. Add in 1 c. sugar a little at a time, beating after each addition.
  3. Add in 1 tsp.
  4. vanilla.
  5. Continue beating till mix holds soft peaks.
  6. Mix cracker cumbs and 1 c. pecans.
  7. Fold into meringue mix a little at a time.
  8. Spoon mix into an 8" pie plate tp form a shell.
  9. Pull up mix into peaks around edge of plate with mack of spoon.
  10. Spread proportionately.
  11. Bake in a moderate oven, 350 F, for 30 min.
  12. Cold thoroughly on a wire cake rack.
  13. Mix cream, 2 Tbsp.
  14. sugar, 1 tsp.
  15. vanilla and almond flavoring.
  16. Whip till thick and shiny.
  17. Spoon into cool pie shell.
  18. Sprinkle remaining 1/2 c. minced pecans round edge of cream.
  19. Using a sharp knife, cut like a pie.
