Sweet and Sour Tuna Steaks

  1. Heat 2 tablespoons of the oil in a large nonstick skillet over medium heat.
  2. Add onions and 1/2 teaspoon each of the salt and pepper.
  3. Cook 12 minutes, tossing several times, until onions have softened and are lightly golden.
  4. Remove onions to a plate; remove skillet from heat.
  5. Season tuna steaks with remaining salt and pepper, then dredge in flour until lightly coated.
  6. Place skillet over high heat and add remaining 1 tablespoon oil.
  7. When oil is very hot (but not smoking), add tuna steaks and sear 1 minute on each side; remove steaks to plate.
  8. Add vinegar, water, honey, and cooked onions to skillet.
  9. Reduce heat to medium and cook, tossing, 1 minute.
  10. Return tuna steaks to skillet and cook 1 minute longer.
  11. Transfer steaks, sweet-and-sour onions, and pan juice to plates.
  12. Serve with steamed green beans, if desired.
