Salmon Cakes

  1. Process the fish, egg, fish sauce, curry paste, sugar and lime juice until well combined.
  2. Stir through the beans, breadcrumbs and mint.
  3. Form mixture into 12 patties and cook several at a time in heated oil over a medium heat for 4-5 minutes each side, until golden and cooked through.
  4. Drain on paper towel.
  5. Accompany with crisp salad and drizzle with dressing to serve.
