Salmon Cakes
- 500g salmon fillets, cut into chunks Walmart Supercenter 1 lb For $5.00 thru 02/14
- 1 egg
- 2 tablespoons gluten free fish sauce
- 1 tablespoon gluten free red curry paste
- 2 teaspoons brown sugar
- 2 teaspoons lime juice Safeway 3 ct For $1.00 thru 02/09
- 50g green beans, finely chopped
- 1/2 cup fresh gluten free breadcrumbs
- 1/4 cup mint leaves, finely sliced
- 1 tablespoon oil
- crisp salad, to serve
- 1/3 cup KRAFT Italian Dressing
- Process the fish, egg, fish sauce, curry paste, sugar and lime juice until well combined.
- Stir through the beans, breadcrumbs and mint.
- Form mixture into 12 patties and cook several at a time in heated oil over a medium heat for 4-5 minutes each side, until golden and cooked through.
- Drain on paper towel.
- Accompany with crisp salad and drizzle with dressing to serve.
