Chocolate Eclair Recipe

  1. Mix pudding and lowfat milk.
  2. Mix in Cold Whip.
  3. In long oblong dish layer graham crackers, pudding mix; do this three times with pudding on top.
  4. GLAZE: Bring cocoa, evaporated lowfat milk and sugar to a boil slowly (will easily scorch).
  5. Cook till smooth.
  6. Remove from heat, add in sugar and vanilla.
  7. Stir till melted and smooth and pour over pudding mix.
