Chocolate Eclair Recipe
- 1 box graham crackers
- 1 container Cold Whip (12 ounce.)
- 1 lg. box French vanilla pudding or possibly 2 sm. boxes (instant)
- 3 c. lowfat milk
- Mix pudding and lowfat milk.
- Mix in Cold Whip.
- In long oblong dish layer graham crackers, pudding mix; do this three times with pudding on top.
- GLAZE: Bring cocoa, evaporated lowfat milk and sugar to a boil slowly (will easily scorch).
- Cook till smooth.
- Remove from heat, add in sugar and vanilla.
- Stir till melted and smooth and pour over pudding mix.
