Broccoli Green Rice Casserole Recipe
- 1 pkt (10-ounce) frzn chooped broccoli
- 3/4 c. Minced onion
- 2 Tbsp. Butter
- 4 lrg Large eggs, beaten
- 2 c. Lowfat milk
- 1 1/2 c. Grated sharp cheddar cheese
- 1 c. Cooked rice
- 1/4 c. Minced canned green chilie
- 1 jar (2-ounce) pimentos, minced
- 1 1/4 tsp Salt
- 1/2 tsp Worcestershire sauce
- Preheat oven to 350 degrees.
- Rinse broccoli with warm water to separate; drain well.
- Saute/fry onion and broccoli in butter till onion is tender.
- Combine with Large eggs and lowfat milk.
- Stir in cheese, rice, chilies, pimentos, salt and Worcestershire sauce.
- Turn into a greased 8-inch-square (2 quart) baking dish.
- Set in shallow pan of warm water.
- Bake about 40 min, till set in center.
