Bleu Cheese Crusted Filet Mignon

  1. Preheat oven to 425F.
  2. Combine panko bread crumbs, 2/3 of Bleu cheese crumbles, and parsley.
  3. (Set aside)
  4. Get gas-grill heated on med-high (you can also use a saute pan for this step, but I prefer to use the grill.)
  5. Salt and pepper filets, use some of blackening seasoning if you want to spice it up.
  6. Then grill each side of filets for 5-8 minutes depending on thickness...This will produce a med-rare...longer times means more cooked.
  7. Put cooked filets in baking pan.
  8. Top with bleu cheese/panko/parsley mixture.
  9. Set aside.
  10. Sautee shallots and garlic with butter until soft in a large saute pan.
  11. Add wine and reduce.
  12. Add beef stock and rosemary, simmer stirring occasionally and reduce by half.
  13. Add 1/3 blue cheese and mix into sauce until blended.
  14. Keep warm.
  15. Put topped filets in oven and brown the bleu cheese topping.
  16. About 5-7 minutes.
  17. Remove from oven, top plate with sauce then steak...next step......
