Taco casserole
- 2 lb carne picada
- 1 can chilpotle salsa
- 1 can black beans
- 1 can diced tomatoes
- 1 can 8 oz tomato sauce
- 1 Anaheim pepper
- 1 Poblano pepper
- 1 leek
- 2 tsp Cumin
- 1 envelope taco seasoning
- 12 Corn tortillas
- 1 Sour cream optional
- 2 cup extra sharp cheddar cheese shredded
- 2 cup Quesadilla cheese shredded
- Brown meat with cumin and taco seasoning until cooked through and no longer pink
- Cut up peppers and leeks rinse well add to meet mixture
- Drain and rinse black beans add to mixture
- Add stewed tomatoes chipotle salsa and tomato sauce stir well
- Once mixture has come to a boil pour half of the mixture into a 11 by 13 baking dish.
- Layer meat mixture with six of the corn tortillas add some shredded cheese repeat meat mixture add the remaining six corn tortillas cover with remaining cheese bake in oven uncovered for 30 minutes at 350F
- Once casserole has cooled dollop sour cream on top of each serving
