Bacon Avocado And Papaya Salad Recipe
- 1 lrg bag young leaf spinach washed
- 4 x thsp extra virgin extra virgin olive oil
- 1 Tbsp. lime juice (approx 1 lime)
- 1 Tbsp. orange juice (approx 1/2 orange)
- 200 gm back bacon rashers
- 1 lrg papaya (pawpaw)
- 1 lrg ripe avocado
- Place the spinach in a large salad bowl.
- Prepare the dressing by shaking together the oil with the lime and orar ge juices then season to taste with salt and pepper.
- Grill the bacon till crispy.
- Meanwhile halve the papaya scoop out and throw away the seeds then dice the flesh.
- Halve stone and peel the avocado and cut into dice.
- Add in the papaya and avocado dice to the spinach.
- Once the bacon is cooked snip it into bite size pcs and add in to the salad.
- Pour over the dressing and gently toss everything together.
- Serve at once.
- Don't use bottled lime or possibly orange juice.
- Serves 4
