Autumn Chicken Salad
- 1 14 cups diced cooked chicken
- 20 red grapes, halved
- 1 celery rib, chopped
- 2 medium red apples, cored and chopped
- 2 cups Baby Spinach or 2 cups arugula
- 13 cup roughly chopped pecans
- 13 cup mayonnaise
- 1 tablespoon crumbled blue cheese
- 1 tablespoon lemon juice
- 14 teaspoon salt
- salad greens or sandwich bun
- Place chicken, grapes, celery, apples, spinach and pecans in a medium bowl.
- In a small bowl, whisk together the mayo, blue cheese, lemon juice and salt.
- Pour dressing over chicken mixture and fold until well coated.
- Mound chicken salad on top of salad greens or serve on sandwich rolls.
