Spaghetti Squash with Italian Sausage

  1. Cut the squash in half.
  2. Scoop out the insides, prick the skin and lay it cut side down in a glass pan.
  3. Pour 1/2 cup water over it and cover.
  4. Microwave 15 minutes or until done.
  5. Scoop out strands and place on platter.
  6. Meanwhile, brown sausage in a pan and drain.
  7. Add onion, pepper and garlic and cook until onions are almost done.
  8. Add the zucchini, beans, tomatoes and seasonings.
  9. Bring to a boil.
  10. Pour over the spaghetti squash and serve.
