Microwave Peanut Brittle

  1. Combine baking soda, water and vanilla in a small dish and set aside.
  2. Place sugar, water and corn syrup in a deep 3-quart heat resistant, non-metallic casserole.
  3. Stir to blend.
  4. Heat, uncovered, on Full power 12 minutes or until candy thermometer registers 240u0b0 (soft ball stage).
  5. Stir in butter until melted. Add peanuts and heat, uncovered, on Full power 20 minutes or until candy thermometer registers 300u0b0 (hard crack).
  6. Grease 2 cookie sheets and warm in a conventional oven at 250u0b0 while peanut mixture is heating.
  7. Stir reserved baking soda mixture into hot candy mixture.
  8. Pour hot peanut brittle onto prepared cookie sheets and spread to 1/4-inch thickness.
  9. When peanut brittle has cooled, break into bite-size pieces.
