Thai Chicken And Pasta Salad Recipe
- 1/2 pound pasta spirals, cooked
- 1 pound chicken breasts, cooked and diced
- 6 to 8 blanched broccoli flowerettes
- 1 red bell pepper, slivered
- 1/2 c. slivered water chestnuts
- 1/2 c. soy sauce
- 1/4 c. lime juice
- 2 tbsp. oil (vegetable)
- 1 tbsp. sesame oil
- 1 tbsp. chopped lemongrass
- 2 teaspoon chopped ginger
- 1 garlic clove, chopped
- 1 chili pepper, chopped
- In large bowl, combine soy sauce, lime juice, oil, sesame oil, lemongrass, ginger, garlic, and chili pepper.
- Add in pasta, chicken, broccoli, bell pepper, and water chestnuts; toss well.
- Chill at least 1 hour and toss again before serving.
- Can also add in shrimp, scallops, asparagus, green beans, minced green onions as variations.
