Shrimp-Spinach Salad with a Citrus Vinaigrette

  1. Thoroughly wash spinach leaves.
  2. Tear leaves into bite-size pieces, and place in a large salad bowl.
  3. Add poached shrimp, hearts of palm, onion, and desired amount of dressing.
  4. Toss until ingredients are well coated.
  5. Sprinkle with orange sections and blue cheese crumbles.
