Veggie-Bean Sloppy Joes
- 1 each onions medium, chopped
- 1 each green bell peppers medium, chopped
- 3 cups brown rice cooked
- 2 each pinto beans 16 ounce cans, mexican style
- 3/4 cup barbecue sauce
- 6 x buns cornbread, or other rolls
- Saute onions and green peppers until tender-crisp.
- Add rice, beans, and barbeque sauce.
- Simmer 10 to 15 minutes until heated through.
- Serve over your choice of rolls/bread.
