Mexican Stuffed Bell Peppers

  1. Preheat oven to 350F.
  2. Cut tops off peppers, remove seeds and membranes.
  3. Boil in salted boiling water for 4 minutes.
  4. Remove into an ice bath, then drain upside down on paper towels.
  5. Brown beef with chopped onions and peppers.
  6. Add 3/4 packet of fajita seasoning mix.
  7. Prepare Rice-a-Roni according to package directions, except add remainder of fajita seasoning when adding the enclosed flavor packet (add that too).
  8. Combine beef mixture and rice in a bowl.
  9. Stuff peppers and stand in a baking dish.
  10. Top each pepper with 1 Tbsp shredded cheese.
  11. Add 1/2 inch water to baking pan.
  12. Bake for 40 minutes.
