Homemade Berry Granola Parfaits
- 2 cups old-fashioned rolled oats
- 1 1/2 cups whole almonds
- 3/4 cup shredded coconut
- 1/4 cup vegetable oil
- 1/2 cup honey
- Salt
- 1/2 cup dried cherries
- 1/2 cup dried cranberries
- 1/2 cup dried pineapple chunks
- 1/2 cup maple syrup
- 4 cups plain yogurt
- 4 cups mixed berries (raspberries, blueberries and strawberries), quartered
- For the granola: Preheat the oven to 350 degrees F.
- Toss the oats, almonds and coconut together on a baking sheet lined with a silicone baking mat.
- Whisk together the vegetable oil and honey in a liquid measuring cup, then pour over the oat mixture.
- Stir until all the oats and nuts are coated.
- Season with salt to taste.
- Bake until golden brown, 40 to 45 minutes.
- Remove the granola from the oven and allow it to cool.
- Add the cherries, cranberries, and pineapple chunks.
- Drizzle with some of the maple syrup and toss together.
- To build the parfaits: Line up eight parfait glasses.
- Start with a large spoonful of the granola, followed by a layer of yogurt, then a layer of berries and a drizzle of maple syrup.
- Repeat the layers one more time, finishing with berries, drizzled with maple syrup.
