Festive potato salad

  1. Wash potatoes.
  2. Place with eggs in large pot cover with water.
  3. Bring to boil.
  4. Boil until potatoes are fork tender.
  5. Remove potatoes from pan.
  6. Scrape off skin.
  7. Cut into quarters, then 1" pieces.
  8. Peel eggs, slice or dice.
  9. Put all ingredients in a large bowl.
  10. Mix together.
  11. Add salt and pepper to taste.
  12. If not wet enough add miracle whip / mayo a tablespoon at a time until the consistency you like.
  13. Refrigerate a couple of hours for cooling and flavors to meld.
  14. Actually makes about 5 cups following the recipe.
