Meatball Soup

  1. In a large bowl, combine meat, onion flakes, and parsley flakes.
  2. Form into 24 (1 inch) meatballs.
  3. Place meatballs in a large skillet sprayed with olive oil-flavored cooking spray.
  4. Cook for about 10 minutes or until meatballs are browned.
  5. Meanwhile, in a large saucepan, combine tomato juice, chicken broth, cream-style corn, and chili seasoning.
  6. Bring mixture to a boil.
  7. Stir in uncooked rice.
  8. Gently add browned meatballs.
  9. Lower heat, cover, and simmer for 15 minutes, stirring occasionally.
