Fast and Economical Quesadillas - Indian Style
- 12 cup leftover curry
- 2 flour tortillas
- 1 cup plain yogurt
- salt, as needed
- ground cumin, as needed
- 2 teaspoons minced cilantro
- Frist make up the simple raita by putting the yogurt in a small mixing bowl.
- Add water, 1 Tablespoon at a time, and beat the yogurt with a large spoon, until you have the desired thickness.
- Mix in the salt, ground cumin and minced cilantro.
- Set aside.
- Meanwhile, heat a griddle over medium heat.
- Take one of the flour tortillas and spread one side with some or all of the curry, depending on how much you want.
- Top with the second tortilla and lay it on the hot griddle.
- A tip here is to take any meat curries and shred the meat.
- If using a vegetable curry, you may need to roughly mash up the curry.
- Potatoes and cheese will help bind everything together.
- and hold the curry in place.
- Cook on the griddle (no oil is needed unless desired) until the tortilla is light brown.
- Flip over and brown the other side.
- Serve using the raita as a dip.
- Sometimes I also make up a mint raita to use for dipping.
