Canadian Breakfast Latkes
- 3 medium eggs
- 12 small zucchini
- 1 small potato
- 1 small onion
- 1 small button mushroom
- 1 slice bread
- 2 tablespoons flour
- 1 pinch salt
- 1 pinch pepper
- Into a microwaveable small bowl or dish:.
- Chop onion and mushroom into small pieces.
- Grate zucchini and potato.
- Add flour and egg, salt and pepper.
- Mix all ingredients well together.
- To cut down cooking time place container in microwave on medium high for two minutes.
- Remove contents to fry pan, flatten and cook each side (until crisp) about 3-4 minutes.
- Fry eggs.
- Toast bread and transfer latke to bread and top with eggs.
- Enjoy.
