Plantain Puffs

  1. Wash the plantain and peel off the skin using a knife.
  2. Chop the plantain into chunks and blend in a blender with the egg.
  3. Or you can mash the plantain and egg in a bowl with a fork until a good blend is achieved Add flour, a dash of salt and pepper and the cinnamon.
  4. Mix thoroughly with a fork until well incorporated.
  5. Let the batter stand for about 10 minutes.
  6. Heat the oil in a heavy-bottomed pot over medium heat.
  7. Once the oil is hot (you can test it by adding a drip of batter into it and it should sizzle), scoop the batter with a cookie scoop and form a ball with your thumb and first index finger.
  8. Drop the scoops of batter into the oil leaving space between them.
  9. Fry the balls until golden brown all round.
  10. Transfer to a paper-towel lined plate to drain excess oil.
  11. Repeat cooking the rest.
  12. Serve with hot sauce.
