Plantain Puffs
- 2 Ripe Plantains
- 1 Egg
- 1 cup Flour
- Salt To Taste
- Hot Pepper, To Taste (optional)
- 1 teaspoon Cinnamon
- 1 cup Oil, For Frying
- Hot Sauce, Optional For Serving
- Wash the plantain and peel off the skin using a knife.
- Chop the plantain into chunks and blend in a blender with the egg.
- Or you can mash the plantain and egg in a bowl with a fork until a good blend is achieved Add flour, a dash of salt and pepper and the cinnamon.
- Mix thoroughly with a fork until well incorporated.
- Let the batter stand for about 10 minutes.
- Heat the oil in a heavy-bottomed pot over medium heat.
- Once the oil is hot (you can test it by adding a drip of batter into it and it should sizzle), scoop the batter with a cookie scoop and form a ball with your thumb and first index finger.
- Drop the scoops of batter into the oil leaving space between them.
- Fry the balls until golden brown all round.
- Transfer to a paper-towel lined plate to drain excess oil.
- Repeat cooking the rest.
- Serve with hot sauce.
