Tandoori Chicken Nachos
- 1 Tbsp. oil
- 1 cup each thin green and red pepper strips Target 1 pkg For $2.99 thru 02/06
- 1/2 cup thinly sliced red onions
- 1/2 tsp. cumin seed
- 3 cups shredded rotisserie chicken Safeway 1 lb For $1.99 thru 02/09
- 2 tsp. tandoori masala
- 1/2 tsp. red chili powder or cayenne pepper
- 1 tomato, chopped Safeway 1 lb For $1.29 thru 02/09
- 1/2 cup finely chopped fresh coriander (cilantro)
- 2 Tbsp. lemon juice
- 1 pkg. (380 g) tortilla chips
- 2-1/2 cups Cracker Barrel Shredded Tex Mex Cheese
- Heat oven to 400 degrees F.
- Heat oil in large skillet on medium-high heat.
- Add peppers, onions and cumin seed; cook and stir 5 min.
- or until vegetables are crisp-tender.
- Add chicken and seasonings; cook and stir 2 min.
- or until heated through.
- Remove from heat.
- Stir in tomatoes, coriander and lemon juice.
- Spread chips evenly onto 2 parchment-covered rimmed baking sheets; sprinkle evenly with half the cheese.
- Cover with chicken mixture and remaining cheese.
- Bake 10 min.
- or until cheese is melted.
