Maple Pecan Muffins with Chocolate Chips

  1. Preheat oven to 375F (190C).
  2. In a medium bowl, combine flour, baking powder and salt.
  3. In a small bowl, combine granulated sugar and half of the pecans.
  4. Set aside.
  5. In a large bowl, beat butter and brown sugar.
  6. Add eggs, one at a time, beating well after each addition.
  7. Stir in milk, vanilla and maple extract.
  8. Stir in flour mixture just until combined.
  9. Fold in chocolate chips and remaining pecans.
  10. Do not overmix.
  11. Spoon batter into prepared muffin cups.
  12. Sprinkle evenly with reserved pecan mixture.
  13. Bake in preheated oven for 20 to 24 minutes or until puffed, golden and a tester inserted into center comes out clean.
  14. Let cool in pan on rack for 5 minutes.
  15. Remove from pan and let cool completely on rack.
