Grilled Rib-Eye Steak

  1. Whisk vinegar and olive oil together in a large nonreactive baking dish.
  2. Add onion, thyme, salt, and pepper.
  3. Marinate steaks in the marinade and refrigerate for 1 hour; turn occasionally.
  4. Grill should be heated to medium-high.
  5. Shake onion bits from the steaks and grill until medium-rare -- about 5 minutes -- or longer if desired.
  6. Serve steaks, thinly sliced, after resting (tented with aluminum foil on a cutting board) 10 minutes.
