Really Green Beans
- 1 lb green beans
- 2 vitamins, c (500 milligram tablets)
- kosher salt
- 1 lemon
- 14 cup olive oil
- 2 teaspoons garlic, finely chopped
- 14 teaspoon red pepper flakes
- Remove wide strips of yellow zest from lemon with a veggie peeler.
- Place lemon strips, oil, garlic and red pepper flakes in hot saucepan.
- Cook over low heat until the oil simmers.
- Let it simmer 2 minutes.
- Remove from heat and cool for 30 minutes to 1 hour.
- Trim stem ends from the green beans.
- Pile them in a large bowl.
- Remove lemon zest from the oil.
- Crush vitamin C tablets to a powder.
- Add that powder and salt to the oil and mix well.
- Prepare the grill for direct cooking over medium heat (350-450).
- Preheat grill pan over direct to medium heat for about 10 minutes.
- Pour oil mixture over the green beans.
- Toss til well coated.
- Using tongs shake off excess oil and spread green beans on the grill pan in a single layer.
- Grill over direct medium heat with lid closed as much as possible until browned in spots and crisp-tender (5-7 minutes) turning occasionally.
- Remove from pan and season to taste with salt and freshly squeezed lemon juice.
- Serve Warm.
