Vietnamese Sandwiches
- 2 whole Boneless Pork Loin Chops
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 1 teaspoon Oregano
- 2 Tablespoons Olive Oil
- 2 whole Baguettes
- 2 teaspoons Mayonnaise
- 1 Tablespoon Fresh Cilantro
- 2 Tablespoons Lime Juice
- 8 slices Cucumbers
- Season each pork chop with salt, pepper, and oregano.
- In a skillet on medium heat, heat oil until hot.
- Cook pork about 4-6 minutes on each side, until no longer pink in the middle and juices run clear.
- Cut pork into slices.
- On each baguette, spread mayonnaise, sprinkle 1/2 tablespoon of cilantro, pour 1 tablespoon lime juice, place 4 cucumber slices, and top with 1 pork loin.
