Super-Moist 100% Whole Wheat Banana Currant Bread

  1. Preheat oven to 350F
  2. Spray a small loaf pan (9x5) with nonstick spray.
  3. Using whisk attachment, mix apple sauce and agave nectar.
  4. Add eggs, beating well.
  5. Mix flour and baking soda together and add to apple sauce mixture.
  6. Blend well with paddle attachment.
  7. Add bananas, sour cream, vanilla, and currants.
  8. Mix well.
  9. Pour into loaf pan.
  10. Bake about 1 hour.
  11. Loaf will look very moist.
  12. Remove loaf from pan and place on cooling rack.
