Pork Tenderloin & Goji Berry Stir-Fry
- 1 pork tenderloin (1 lb./450 g), thinly sliced Safeway 1 lb For $3.99 thru 02/09
- 1 Tbsp. corn starch
- 1 Tbsp. reduced-sodium soy sauce
- 1 egg white, lightly beaten
- 1 Tbsp. oil, divided
- 1/3 cup dried goji berries, rehydrated, drained
- 3 stalks celery, cut into 3/4-inch-thick slices
- 1 Tbsp. water
- 1/4 cup Kraft Extra Virgin Olive Oil Tuscan Italian Dressing
- Toss meat with corn starch and soy sauce until evenly coated.
- Add egg white; mix lightly.
- Let stand 5 min.
- Heat 1-1/2 tsp.
- oil in nonstick wok on high heat.
- Add meat; stir-fry 1 min.
- Remove meat from wok; set aside.
- Heat remaining oil in wok.
- Add berries, celery and water; stir-fry 1 min.
- Return meat to wok; stir-fry 1 min.
- or until done.
- Add dressing; stir-fry 30 sec.
