Savory Garden Spaghetti Sauce
- 3 whole Onions, White Or Yellow
- 3 Tablespoons Butter
- 24 cloves Peeled Garlic
- 8 ounces, weight Mushrooms (optional)
- 30 whole Medium Tomatoes (more Or Less Depending On The Size)
- 2 whole Bell Peppers, Any Color
- 20 leaves Fresh Basil, Or More To Taste
- 2 whole Pinches Of Thyme
- Kosher Salt And Cracked Pepper, To Taste
- 2 Tablespoons Each Of Oregano, Rosemary & Parsley (fresh If You Have It, Dried If You Don't!)
- Wash and rough chop all of the veggies, garlic and herbs.
- Over medium heat saute onion pieces in the butter in a large stock pot for 5 mintues.
- Add in garlic and mushrooms, saute 5 minutes more.
- Add in all of the remaining veggies and the basil.
- Season well with all of the listed seasonings, per your taste buds.
- Simmer on the stove, covered, for 45 minutes.
- Stir and continue to simmer, uncovered, for the next 5-7 hours.
- Your house is going to smell amazing!
- Right before serving, blend the sauce with an immersion blender and season well again.
- The tomatoes really bland everything down, youll be surprised how much seasoning you need!
- (I probably did at least 2 tablespoons of each herb total, by this second time seasoning!!)
- Serve hot and fresh over pasta.
- Or place in jars, filling the jars 3/4 of the way full, cool and freeze.
