Western Salad
- 1 can (1 lb.) drained chickpeas
- garbanzo beans
- 2 avocados, peeled and sliced
- 2/3 cup prepared Italian dressing
- Lettuce leaves
- 2 tbsp. sliced black olives
- 2 tbsp. pimiento strips
- In a small mixing bowl, pour dressing over beans and avocados.
- Chill in refrigerator for 15 minutes or until ready to serve.
- To serve, arrange vegetables on lettuce leaves.
- Garnish with olives and pimiento strips.
