- this was one of those survival meals I learned in home economics from Ms.
- Spaetti!!
- !
- place 3/4 of a bag of corn chips in a ziplock bag.. zip it and approximately 4" open.
- let your kids beat the heck out of them until the are finely broken.... this is perfect for those chips that are starting to go stale..
- while they are doing this you can begin Browning the ground beef and onion..
- I did not add s&p because of the taco seasoning pack.
- drain... add salsa..
- spray baking dish with non-stick spray.
- pour crushed corn chips in a baking dish and cover bottom of pan with crumbs.
- spoon ground beef mixture on top of crushed corn chips trying not to move the chips around to much.
- put black olives on the top of ground beef.
- then cover it with cheese...
- mix eggs and milk in a sepeeate bowl.
- MIX WELL!!!
- pour mixture over casserole and put in the oven at 350 for 30-40 minutes.
- cheese should melt and just start getting bubbly.
- take out and let sit for 10 minutes.
- the crust should be like a tamale pie..
- I serve with a plain lettuce, tomato, and cheese salad.
